If you're in a pinch and need to make a dinner for two out of your one Thistle meal, we have four easy hacks so you can make this happen.

If you didn’t order enough meals for yourself, forgot to double up on your meals this week, or have a surprise dinner guest who you want to feed, here are some hacks to make your Thistle meals work for two people.

  • Super-size it - It’s easy to add a lot of different foods into a Thistle meal. Got extra garbanzo beans, tofu, kale, or spinach? Leftover quinoa or rice?
  • Wrap it up - Because our meals are vegetable based, it’s easy to wrap them up with your go-to wrap and have a meal for two. Get two tortillas, divvy up the Green Grain Taco Salad, and wrap them up for a satisfying meal for two. If you have a few extra minutes, you can heat it up on the skillet for a nice crunchy wrap. Or if you have the Veggie Bibimbap or Caterpillar Sushi Salad, wrap it in seaweed or rice paper and slice it — now you have sushi-style rolls to dip into the dressing or soy sauce.
  • Heat up stew for 2 - Take a dish like our breakfast Quinoa Ranchera, add in salsa and veggie broth, and you have a stew for two. The Sunbutter Satay Noodles or Hoisin Noodles with Tofu makes a wonderful soup. Add water or broth, mix in the dressing, for a satisfying and cozy noodle soup for you and a friend.
  • Go with the grain - Do you have a Kale Caesar salad on hand? Cook up some pasta, heat up the salad, and mix it all together in a bowl with the dressing. Or add rice or quinoa into any meal to have more of it to share.
