Summer is here, and our warm weather menu is ready! So, what’s on the menu? Here’s a sneak peek at the fresh, seasonal goodness we’ve got in store for you! 

Corn Sabroso Salad

In the Corn Sabroso Salad, we are combining our elote-style corn salsa and roasted jalapeno rice with crisp greens and a not-too-spicy roasted jalapeno ranch dressing for a hearty salad that will satisfy your appetite while keeping you nice and cool. 

Savory Sesame Salad

Speaking of cool, our Savory Sesame Salad is packed with flavor (of course!), and crisp, hydrating cucumbers, baby spinach, and sesame edamame. My favorite element to this dish, though, is our brand-new creamy toasted sesame dressing. Sesame is a fantastic source of fiber as well as flavor, and this dressing has both, 

Green Fajita Bowl

Our Green Fajita Bowl gets its color from a few sources. We are layering tender baby spinach with our Green Grains, sauteed bell peppers and onions, and our bright, verdant avocado and herb Guasacaca sauce. Fresh herbs and poblanos round out the look while giving this bowl their signature south of the border flavor.

Hera’s Bowl

If the warm weather has you dreaming of a sun-soaked Greek getaway, our Hera’s Bowl may help to transport you there (in spirit, anyway)! Juicy, lycopene-rich grape tomatoes, crispy falafel crumbles, and our light and creamy herb cucumber sauce are warmed with orzo made by our friends at Banza for a dinner any goddess would approve of.

Eggplant Caponata

Perhaps you’re envisioning a stroll through Sicily? In that case, our Eggplant Caponata will be right up your alley (or vicolo)! Eggplant is heart-healthy, cholesterol-busting, and delicious, especially when we combine it with our garlic and herb orzo and roasted cauliflower. 

Sun-Kissed Bowl

Thistle’s Sun-Kissed Bowl will transport you in a different direction, to the mango and coconut groves of far-offlands, where sweet, sticky rice is combined with tender roasted broccoli, crunchy snap peas (which are also rich in Vitamin K and fiber), and crisp red bell pepper. 

Banchan BBQ Bowl

Got a craving for something a little more to the East? Try our Banchan BBQ Bowl! Our Chef Briana has whipped up a dinner that will take you on a probiotic journey, thanks to her amazing creamy kimchi sauce, which she has combined with sauteed peppers and zucchini, Banchan “Fried” Rice, and cooling daikon and pickled carrots. 

Raspberry Matcha Oats

For breakfast, tuck into our cool, soothing Raspberry Matcha Oats. There are too many health benefits to list when it comes to antioxidant-rich green tea, but one thing I could go on for pages about is their benefits to your tastebuds (I won’t, I promise). We are pairing these oats with our Raspberry Chia Jam and Raspberry Seed Granola for what may be the prettiest bowl of oats in existence!

Passionfruit Pudding

If tart and tropical is how you like to start the day, our Passionfruit Pudding is just the thing. We make a compote out of zippy, Vitamin C-rich passionfruit, and pair it with crisp coconut hemp granola and coconut rice pudding for a cool, lightly sweet, and utterly delicious breakfast.

Green Enchilada Bake

Last, the dish that has the whole office buzzing… meet our Green Enchilada Bake! We are combining tomatillos and green chilis, our incredible vegan “queso”, black beans, and lots more to create a bake that packs a powerful flavor punch! If you like our original enchilada bake, I’m sure you are going to love this!
