Serves:
 2-3 portions

Ingredients:
- your favorite ice cream
- 1/3 cup chocolate chips
- 1 tbsp coconut oil

  • Cut each of the energy balls in half with a sharp knife, then press each half down between a piece of parchment paper to create a flatter cookie-like shape.
  • Melt chocolate chips with coconut oil to create a chocolate shell for your mini ice cream sandwiches:
  • Melt the chocolate chips and coconut oil together in a microwave safe bowl for about 40 seconds OR using a double boiler on the stovetop.
  • Dip the mini ice cream sandwiches half-way into the chocolate sauce, then place on a tray or plate lined with parchment paper.
  • Freeze for 10 minutes and enjoy! Will keep in the freezer for up to 5 days.
