Let’s start off a short intro—tell us a little bit about yourself. What makes you, well, you? No rules, no limits. Anything you feel like sharing so we can learn a little more about you.

Hi! I’m a winemaker at Quintessa, an Organic and Biodynamic vineyard in Napa Valley, and at Post & Vine Wines, a small project working with old vine vineyards in Northern California. Winemaking is my job but also my passion. 

How long have you been part of the Thistle Community?

I’ve been a Thistle member since 2019, maybe even earlier.

What city do you live in? 

Napa, CA

Why did you join Thistle?

I first joined Thistle because I found I wasn’t making the time to bring healthy lunches to work, and instead was buying and eating whatever was closest to hand (ie: a lot of burritos). I wanted to stop eating out so much and also, as a former vegetarian, to increase my plant-based meals and reduce my meat consumption.

How has Thistle impacted your life? 

With Thistle I know I will start the work week out right with healthy and delicious lunches. It’s lessened my dependence on animal protein and as an added bonus I save at least an hour a week in meal prep.

We are honored that you choose Thistle to help you eat more plants. What does eating plant-based foods mean to you? 

To me eating plant-based foods means not only whole food nutrition but also a meaningful way to reduce my carbon footprint.

We love empowering our Thistle Community with ways to make meaningful, positive environmental impact, big or small. What are some of your lifestyle practices to live a more sustainable lifestyle? 

Eating organic and local whenever possible and working to limit my plastic use.

What keeps you coming back to Thistle?

The ease and convenience of delivery and the delicious meals.

What's your favorite Thistle meal?

Southwest Sweet Potato Taco Salad with Adobo Pinto Beans
