This recipe is so versatile! Roasting the nuts & seeds before blending will give the butter a really nice deep & toasty flavor. You could also swap out any of the nuts or seeds to your liking - walnuts, hazelnuts, hemp seeds, pepitas (pumpkin seeds), sesame seeds would all work great in this recipe. Add in a few tablespoons of maple syrup if you prefer a sweeter mix. Add in a few tablespoons of maple syrup AND cacao powder for a chocolate version!

Ingredients

1 cup (136 g) raw almonds (skin on)
1 cup (127 g) raw cashews
1 cup (90 g) raw pecans
2 Tbsp (20 g) chia seeds
2 Tbsp (13 g) flax seeds
1 Tbsp (5 g) ground cinnamon (optional)
1 tsp (4 g) vanilla extract (optional)
1/4 tsp (1 g) salt (optional)

Instructions

Add the almonds, cashews & pecans to a food processor or high-speed blender (like a Vitamix) - blend until the nuts are very well blended & creamy. This should take about 10 minutes depending on the speed/power of your machine. Pause every minute or so to scrape down the sides as needed. If it’s not as creamy as you would like it, let it sit in the food processor for up to an hour to let the oils seep out and try blending it again.

Add in the chia seeds, flax seeds, and the cinnamon, vanilla & salt if using. Blend until very well incorporated. Taste to see if you’d like more cinnamon, salt, or if you think you need a little sweetness from maple syrup!

Transfer to a glass mason jar & secure with a lid. The nut butter will last 2-3 months in the refrigerator.  

Pro Tip! Pop the jar in the microwave (without the lid!) for about 15 - 30 seconds to help soften it if enjoying straight from the refrigerator. The natural oils in the nut butter will separate, so make sure to give it a good stir to get the best flavor & texture!
