Ingredient List

1/3 cup coconut oil, softened
1/3 cup cashew butter
1 heaping tablespoon flaxseed meal
2 tbsp water
1/3 cup coconut sugar
1/2 tsp vanilla extract
1 cup oat flour
1/4 cup + 1 tbsp almond meal
1/4 tsp baking soda
1/8 tsp reishi mushroom powder (optional)
1/4 cup unsweetened chocolate chips
2 tbsp chopped walnuts
Pinch of Maldon salt

Equipment List

  • Spatula or large spoon
  • Medium mixing bowl
  • Baking sheet
  • Parchment paper (optional)
  • 1 ounce scoop (or a tablespoon)

Instructions

  1. Make a flax egg by mixing the ground flax seeds and water in a small bowl. Let it sit while you prep the rest of the ingredients.
  2. In a medium size mixing bowl, add the softened coconut oil and cashew butter. Add in the coconut sugar and mix well with a spatula.
  3. Add the flax egg, vanilla extract, and dry ingredients. Mix well until you achieve a cookie dough consistency.
  4. Add the chopped walnuts (if using) and chocolate chips. Mix well.
  5. Scoop the cookie dough balls using a 1 oz scoop or 2 tbsp and hand roll them in shape.
  6. Sprinkle with flaky salt and pop them in the fridge to chill. Once chilled, they’re ready to enjoy!
  7. If you’d like to bake them into cookies, preheat your oven to 325 degrees and place the balls into a parchment paper lined baking sheet. Bake for 10-12 minutes in preheated oven until ready (golden brown and chocolate is melty). Let them cool before enjoying.
