Get mellow with this Golden Mellow Smoothie, featuring Golden Mellow Mix from our friends at Your Super

Makes 2 Servings

Vanilla Chia Pudding

2/3 cup oat mylk (or plant-based mylk of your choice)
2 tsp maple syrup
1/2 tsp vanilla extract
pinch of sea salt
1/4 cup chia seeds

Whisk together oat milk, maple syrup, vanilla and salt.  Add the chia seeds and stir to combine. Let the mixture sit in the refrigerator for at least 30 minutes (mixing again halfway through) until the chia seeds have plumped and the pudding has thickened.

Golden Mellow Smoothie

1/3 cup oat milk (or plant-based mylk of your choice)
2/3 cup frozen peaches
1 cup frozen banana slices
1 tbsp maple syrup
2 tsp protein powder
1/2 tsp Your Super's Golden Mellow Superfood Mix
pinch of sea salt

Using a blender or immersion blender, combine all ingredients and blend until smooth.

Granola

2 tbsp slivered or sliced almonds
2 tbsp shredded coconut
1.5 tbsp hemp seeds
2 tsp sunflower seeds
1/2 tsp coconut oil
1/2 tsp maple syrup
Pinch of pink himalayan salt
1 tsp dried cranberries
1 tsp golden raisins
1 tsp goji berries

Preheat the oven to 300 degrees F. Mix the almonds, coconut, hemp & sunflower seeds with the melted coconut oil, maple syrup and salt.

Spread out the granola mix and bake, mixing often, to ensure the mix is completely golden brown and crunchy (about 10-15 minutes). Remove from the oven and let cool. Once cooled, mix in the dried fruit.  

Assemble the smoothie

Using a clear glass or jar (so you can see the layers), begin with a 1/2 cup layer of the vanilla chia pudding.  Carefully add half of the Golden Mellow Smoothie over the chia pudding and then sprinkle with granola.
