Turn any of our Thistle oatmeals into a waffle for a fun breakfast treat!

Ingredients

1 Thistle oatmeal breakfast

1 tbsp ground flax meal

2 tbsp water

1 tsp baking powder

1/4 cup oat flour

2 tbsp water or mylk of choice

1 tsp coconut oil, melted (or avocado oil)

Cooking spray of choice

Seasonal fruit (as a garnish)

Directions

  1. Preheat waffle iron to a medium heat setting.
  2. While waffle iron is heating, make a “flax egg” by combining flax meal and water in a small bowl. Let stand for 5 minutes, until the flax absorbs the water and becomes a gel-like consistency.
  3. Open the Thistle oatmeal breakfast. Set aside the ramekin of creamy sauce and any fruit or granola topping (these will be used to top your waffle).
  4. Combine the oatmeal, “flax egg,” baking powder and coconut oil in a medium bowl and stir to combine.
  5. Once waffle iron is heated, spray the top and bottom with cooking spray (or brush with additional coconut oil) and transfer oatmeal mixture to the center of the iron. Close waffle iron and let cook for 5-6 minutes, until waffle is golden brown and crispy.
  6. Remove from waffle iron with a fork or tongs and top with creamy Thistle sauce and colorful seasonal fruit.
