Enjoy this Tropikale Green Smoothie anytime. Kale and tropical fruit with homemade granola - yes please!

For the Granola (makes 2 servings)

2 tbsp slivered or sliced almonds
2 tbsp shredded coconut
1.5 tbsp hemp seeds
2 tsp sunflower seeds
1/2 tsp coconut oil
1/2 tsp maple syrup
Pinch of pink Himalayan salt
1 tsp dried cranberries
1 tsp golden raisins
1 tsp goji berries

Preheat the oven to 300 degrees F. Mix the almonds, coconut, hemp & sunflower seeds with the melted coconut oil, maple syrup and salt.

Spread out the granola mix and bake, mixing often, to ensure the mix is completely golden brown and crunchy (about 10-15 minutes). Remove from the oven and let cool. Once cooled, mix in the dried fruit.  

For the Smoothie (makes 2 servings)

1 cup diced pineapple (frozen)
3/4 cup diced mango (frozen)
2.5 cups loosely packed baby kale leaves
2/3 cup frozen spinach
3 tbsp hemp seeds
1 tsp wheatgrass
1/8 tsp spirulina
1/2 cup apple juice (or apple cider)
1/4 cup water
2 tbsp orange juice
2 tbsp chia seeds

While the granola mixture is cooling, combine all of the ingredients except for the chia seeds in a blender and process until smooth (about 1 minute).  Add the chia seeds and pulse 2-3 times until incorporated.  Divide between two glasses and place in the refrigerator for about 5 minutes, until the chia seeds plump up and thicken the smoothie mixture.  Top with granola mixture and enjoy!
