Cinnamon French Toast

Cook time: 10-15 minutes

Serves: 2 people

Ingredients

6 slices of your favorite day old bread
1/4 cup
mylk of choice (my favorites are cashew or oat) 
2 tbsp
flaxseeds, mixed with 2 tbsp water (or 2 eggs) 
2 tbsp
butter of choice (or coconut oil) 
1 tbsp
maple syrup or coconut sugar
1/2 tsp
cinnamon 
1/4 tsp
vanilla extract 
1/4 tsp
salt 
1/2 tsp
orange zest (optional)

Some suggested serving ideas:

2 tbsp peanut butter, 1 banana (sliced), warmed maple syrup or honey
2 tbsp coconut whipped cream (or your favorite whipped cream, yogurt, etc.), fresh berries, maple syrup

Directions

1. Heat a large skillet to medium heat. Add in half of your butter and swirl it around until it’s fully melted. 

2. Combine the milk, flaxseeds/eggs, sweetener, cinnamon, vanilla, orange extract and salt and whisk until homogenized. Dip your bread in your custard mixture on both sides.

3. Fry bread for 3-4 minutes on the first side, and another 2-3 on the second. Repeat with the second round of slices, and serve with toppings of your choice!
