For this snack, all you need is tomatoes, either cherry tomatoes or plum tomatoes that you have diced, chopped basil, vegan mozzarella (we love the one from Miyoko’s), balsamic vinegar, oil, and some seasonings to add to the bright and flavorful taste. 

This is a very light snack that only takes 30 minutes to make. You can decide to refrigerate it to keep it colder and allow it to soak up more of the oil and vinegar, but it’s ready as soon as all the ingredients are in and it’s been mixed up. You can enjoy this with toasted gluten-free bread to add a bit of crunch. It’s delicious either way.

6. Chickpea Salad Snack by Thistle
